Refresh Your Mind with Peach and Grape Wine

"If you love to booze occasionally, you must not miss the taste and jolting experience of wine made from juicy and nutritious Peaches. If you add grapes to it, it becomes more energetic. The wine made from Peaches and grapes is refreshing, provides you relief from all day work stress and alters your mood."


It’s a great fun to take Peach wine on a hot summer evening and enjoy some refreshing moments. Better to take the wine with a dessert, a cheesecake or something fruity. As the wine is made from nutritious components, they improve your health. Here is the procedure to prepare wine from Peaches and Grapes.

Ingredients:

  • 3 lbs ripe peaches
  • 12 oz frozen white grape concentrate
  • 1-1/2 tsp acid blend
  • 1-3/4 lbs granulated sugar
  • 1/2 tsp pectic enzyme
  • One gallon water
  • 1/4 tsp tannin
  • 1 crushed Campden tablet
  • Champagne wine yeast
  • 1 tsp yeast nutrient
Steps to prepare Peach and Grape wine:
  • Place the water on oven to let it boil.
  • Add sugar to the water when it starts boiling.
  • Meanwhile, wash the peaches without peeling. 
  • Cut the peaches in slices and pack them tightly in a nylon straining bag and tie the bag closed.
  • Squeeze the bag and mash the slices until no solids remain. 
  • When peaches are perfectly mashed up, bring them out and add frozen white grape juice. 
  • Now pour the sweetened boiling water to the mixture of grapes and peaches.
  • Allow it to cool for some time.
  • On the cold fruit cream, add other ingredients such as yeast nutrient, tannin, acid blend and crushed Campden tablet. 
  • Leave the mixture for 12 hours to allow the necessary reactions to take place.
  • Now add pectic enzyme and leave it for another 12 hours to allow another phase of reactions. 
  • After 12 hours, sprinkle yeast over the must. 
  • Stir daily for 10 days, then drip drain pulp without squashing. 
  • Drain out sediments into another vessel and store the liquid in an airtight container. 
  • Rack every 30 days until the process of fermentation is complete and wine separates out. 
  • Leave the liquid for two months again. After three months, peach and grape wine is ready to serve and enjoy.

Peach Pie: Make this Summer More Delicious


Peaches are great fruit items that can be used in different dish recipes to make them more nutritious and delicious. Peaches can be added to cocktails to make them sweeter, in salsas to make them more tasteful and in any cobbler or crisp to enhance their taste and health value. We are lucky as the season of peaches is on and we can get fresh peaches in the market at this time. Peach pie is a delicious dish that most of us like to relish. If you do not want to miss the taste of Peach pie in this season, get ready to prepare the delicious dish at your home. Here is the necessary ingredients and preparation method.

Pie Crust preparation:
Ingredients:
  1. 1 ½ cup whole wheat flour
  2. 1 ½ cup plain flour
  3. 1 tsp kosher salt
  4. ½  cup unsalted butter, cubed and chilled
  5. ½ cup lard
  6. ½  cup ice cold water
Pie Crust preparation method:
  • Place the flour and salt in a bowl. Add lard and butter to the bowl. 
  • Knead the flour into lard and butter; and as you get lumps of flour in your hands, rub them well until you get uniformly mixed damp dough.
  • Add water and again knead them like before.
  • Take the dough out of the bowl and cut it into two equal chunks. Cover the chunks with plastic wraps and put them in refrigerator for 30 minutes.   
  • Now you need to roll the dough with a rolling pin to transform the dough into 10-12 inches diameter circle having 1/8 to ¼ inch thickness. Sprinkle some flour dust over the dough to make the process easier.   
  • Place the dough crust carpet in a 9-inch Pie pan. 
Prepare the fillings: 
Ingredients:
  • 6 to 8 fresh peaches 
  • ½  cup sugar
  • 2 tsp cornstarch
  • Juice of half a lemon
  • ¼ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 egg white mixed with 2 tsp water 
  • sugar for dusting
Peach Pie (Adding fillings and Finishing):
1. Place water in a large pot and place it on a preheated oven at 400 F. Blanch the peaches for 10 to 20 seconds.

2. Peel off the skin from Peaches. Cut them into halves. Slice each half into 3 pieces.

3. Transfer the Peach slices into a large bowl and mix them well with sugar and cornstarch. This will avoid clumping of the cornstarch.

4. Add lemon juice, nutmeg and cinnamon to the slices.

5. Use your hands to mix sugar and spices.

6. Now transfer the peach fillings (slices mixed with other ingredients) over the dough crust placed in the pie pan.

7. Pour the juice over the top until it comes 3/4 of the way to the top.

8. Roll out the top crust and either cut it into strips for a lattice top or use it as whole.

9. Use egg white at the edges of the bottom crust to attach the top crust. Trim the excess crust. Crimp the crust.

10. Brush the top crust with egg wash and sprinkle sugar over it.

11. Place the pie on a sheet tray with open edges that makes easier to take the pie on and off from the oven.

12. Bake the pie for 20 minutes at 400 degree Fahrenheit and then reduce the heat to 350 F.

13. Bake it for another 40 to 50 minutes or until the juices are bubbling and the crust turns brown.

14. Remove the Peach pie from the oven and allow it to cool down.

15. Peach Pie is ready. You can slice it and serve cold or warm, with cream or ice cream, or without adding anything.

Wow Its Summer! Time to Relish Some Delicious Peach Ice-creams


If you love ice creams, you can make them more nutritious and delicious by adding peaches. Whenever I think of tasty Peach ice creams, water starts coming out from my mouth. I love peach ice creams the most. This is the reason I wait eagerly for summers to arrive. Peaches provide a different taste and flavor to ice-creams. Here is how you can prepare peach ice creams at home.

Ingredients:
  • 3/4 cup sugar 
  • 2 cups milk 
  • 1 cup heavy whipping cream
  • 2 table spoons cornstarch
  • 1 egg yolk 
  • 1/8 tea spoon salt 
  • 1 1/2 tea spoons vanilla bean paste
  • 2 table spoons light corn syrup
  • 1 cup peeled and coarsely chopped peaches 
  • 1 1/2 table spoons butter
  • 1 cup coarsely chopped pecans
  • 1/4 tea spoon kosher salt

Preparation method:
  • Take requisite amount of sugar, cornstarch and salt in a saucepan and mix them well. Gradually add milk and whipping cream to the mixture. Cook them at moderate temperature for 10 to 12 minutes or until mixture takes thick consistency. 
  • Take 1 cup of the thickened mixture and add egg yolks to it. Mix them well. Add vanilla bean paste to the creamy mixture. Let the mixture cool down for 1 hour. Stir it occasionally.
  • Meanwhile, take peaches and corn syrup in a small saucepan and cook them at moderate heat. Cook the mixture for 4 to 5 minutes while stirring it occasionally. Mash the mixture and let it cool down for 30 minutes. Now add peach mixture to cooled cream mixture and stir them well.
  • Cover the cream mixture in a plastic wrap and chill it for 8 to 24 hours.
  • Meanwhile, place butter in a pan over moderate heat and let it melt. Add pecans and cook it in melted butter for 8 to 9 minutes until they become crisp. Remove the pan from oven and sprinkle ¼ tsp Kosher salt on it. Let it cool down for 30 minutes. 
  • Place chilled cream mixture into freezer of ice-cream maker. Add pecan mixture to it and stir them well. Pour the ice-cream mixture into an airtight container to give them a solid shape. Freeze the cream mixture for certain duration. (According to freezer manufacturer’s instruction/ 18-24 hrs)
  • Delicious peach ice-creams are ready for you and your guests.

How to Prepare Peach Cobbler at Your Home?


Peaches are very nutritious and delicious. You can prepare delicious dishes by using peaches. There is a large variety of dishes that can be prepared from peaches. In this blog, I will provide you information about making Peach Cobbler, a tasty dish.

This is my favorite summer dessert. According to your taste, you can prepare sweet Peach Cobbler or its variation (slight sour in taste). Cobbler dish is prepared by adding flour on top of the fresh peach slices. The combination is baked in the oven. Here are the complete details.

Sweet Peach Cobbler:

Ingredients:

  • 1 cup granulated sugar
  • ½ cup (1 stick) unsalted butter
  • 1 cup flour
  • 1 Teaspoon baking powder
  • 1 teaspoon cinnamon 
  • 3 cups sliced fresh peaches 
  • ¾ cup milk (low-fat or non-fat)
  • ½ cup firmly packed brown sugar

Steps to prepare Sweet Peach Cobbler:


  • Preheat oven to 350°F.
  • Place the butter in moderate heated pan.
  • Let the butter melt while the pan gets more heated. Do not stop until the butter starts bubbling and turns golden brown.  
  • Transfer the melted butter into a baking dish.
  • In a medium size bowl, place flour, sugar, baking powder, milk and cinnamon together. Mix them well. 
  • Pour the mixed stuff on top of the cooked butter. Do not stir.
  • Place peaches evenly on top of the present dish.
  • Spray brown sugar over the dish in an even manner. 
  • Now, heat the dish for 40 to 45 minutes, until the upper portion takes golden brown color. The melted butter at the bottom of the dish will migrate to cover the peaches and sides of the dish. Cobbler is ready now. 
  • Let the dish cool down slightly. You can serve the cobbler warm or at room temperature. 

With this amount of ingredients, you can prepare cobbler for 6 to 8 people.

Peach Cobbler - Variation

Ingredients to make Peach mixture:

  • 6 peaches, peeled, sliced and mixed with Fruit Fresh
  • 2 Tablespoons cornstarch
  • 2 Tablespoons lemon juice
  • ½ cup sugar AND / OR Stevia (or if you prefer, Splenda)

Steps to prepare Peach mixture:

  • Mix the sugar, cinnamon and cornstarch together in a container
  • Add peaches and lemon juice. Mix them well. 
  • Heat and stir the mixture until it thickens and starts boiling
  • Boil for one minute
  • Pour into a 2 quart casserole while you make the topping.

Topping Ingredients:

  • 1 cup plain flour
  • ½ teaspoon salt (optional)
  • 1 ½ teaspoons baking powder
  • ½ cup milk (whole, nonfat, low fat)
  • 3 Tablespoons vegetable cuttings
  • 1/4 teaspoon Cinnamon
Prepare the Topping:

  • In a separate container, prepare topping mixture by adding all the ingredients such as sugar, baking powder and salt.
  • Add milk and stir well to prepare the mixture

Preparing Cobbler:

  • Add the topping mixture into the peach mixture spoon by spoon.
  • Heat at 400 F for about 25 minutes until the top turns golden brown.
  • Serve the dish warm. (best with vanilla ice cream)
